  • 4 medium carrots, peeled and cut into large chunks
  • 3 medium potatoes, peeled and quartered
  • 1 large yellow onion, sliced
  • 3 cloves garlic, minced
  • 2 cups gluten-free beef broth
  • 2 tbsp tomato paste
  • 2 tbsp gluten-free Worcestershire sauce
  • Optional: splash of red wine

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season roast with salt, pepper, thyme, onion powder, and garlic powder.
  2. Sear roast on all sides until browned (about 3 to 4 minutes per side).
  3. Place carrots, potatoes, onion, and garlic in bottom of slow cooker.
  4. Lay seared roast on top of vegetables.
  5. In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, and wine if using. Pour over roast.
  6. Cover and cook on LOW for 8 to 9 hours or HIGH for 5 to 6 hours, until meat is fork-tender.
  7. Serve with juices spooned over meat and vegetables. Add parsley if desired.
